Easter Egg Nest Cake

Easter Cake Chocolate Eggstravaganza – you have my apologies for the title but it had to be done! We had many contenders for the title though, like Chocolate Infinity something or other, or the rather dubious Eggfall Easter Cake. Erm, it would seem that intellectual creativity took a walk when we were naming this cake! If you have any ideas, let me know with a comment below!

I bet I know your first question, so let’s get straight to that, shall we? The anti gravity look you see here, is courtesy of, wait for it – The Anti Gravity Cake Kit from Lakeland, here in the UK, my favourite source for bakeware. It’s basically a plastic cake stand with some tubing that you attach to the base and build your cake around. Theoretically, you could achieve the same angled pillar with some fondant mixed with Tylose powder or Gum Tragacanth that’s left to dry out for a whole day. The fondant will then be rock hard and able to withstand weight.

However, we are talking about the anti gravity kit here – I was in Lakeland one day, saw the kit as I was browsing, and there was just no reasonable argument against getting it as it was only £10/$15. There are so many possibilities with this stand but for an Easter post, I guess you can’t quite beat the whole egg theme and the look here is one I saw on the back of an old Lakeland catalogue or something. My kids fell in love with the look and there was just no getting away from it!

With today’s post, there isn’t really a new recipe to make, it’s more of just an assembly job! Besides the kit, you need a Madeira cake (recipe here), some buttercream (recipe here), jam of your choice, apricot will be lovely with the chocolate, or even marmalade (recipe for strawberry jam here) and then, a whole lot of chocolate flakes and chocolate eggs! Chicks optional!

Melted Chocolate

We use melted chocolate for the “glue” that holds the chocolate nest (the flakes) together as well as for the mini eggs on the pillar. Chocolate Ganache will not stiffen enough to do the job. Dark chocolate is technically best for this job as it will harden quickest but for purely taste reasons, I’ve gone for milk chocolate as I figured the kids would enjoy eating that more!

However, that meant I had to wait quite a while for the right consistency for the melted chocolate as well as for the “glue” on the pillar to dry sufficiently enough to start sticking the mini eggs on. Dark chocolate would have taken half the time.

Now, shall we get our aprons on?

Ingredients

  • 1 x 20cm 8″ madeira cake
  • ½ portion vanilla buttercream
  • about ½ cup jam of your choice
  • 24-30 Cadbury’s Flakes or something similar
  • 200 g Cadbury's dairy milk or equivalent giant buttons (no breaking required!)
  • lots and lots AND LOTS of colourful mini eggs
  • 1 medium sized chocolate egg

Instructions

  • Break into pieces the 200g (7oz) of Cadbury’s dairy milk bar and melt in the microwave for 60 – 120 seconds, stirring in between. If your microwave has a high wattage, like 1000w, do it at 80% power.
  • Let this melted chocolate cool somewhere cool, by a slightly open window would be good, while you go and get everything else ready.
  • Halve and sandwich the cake with the buttercream and jam. See instruction link above.
  • Decide which hole on the cake stand you're going to use (read instructions on the kit).
  • Assemble the anti gravity stand as per instructions on the kit, attaching tubing 1 to the base and securing with the nut on the bottom.
  • Push the madeira cake through the tube until it is flat on the base.
  • Connect the other 2 tubes as instructed on the kit and now you're ready for some messy fun!
  • But first, line the base by sliding some paper underneath the cake, as in the picture. We always do this before decorating a cake to stop the base from getting messy. Just get any plain copy paper type and cut in strips.
  • Coat the cake sides with the melted chocolate. You can coat the top or leave it bare as we did, so the mini eggs were just resting on the top and could be picked off.
  • After coating the sides, start building the nest by sticking the chocolate flakes all around as in the picture gallery above. The flakes will be sticking out, that's fine. Break the lat one on each line to size if you have to.
  • When the nest is built, take a spoon and just lightly drizzle some melted chocolate on the inside of the nest. This will ensure that the flakes stick to each other as the chocolate dries and the cake is sturdy.
  • Now, it’s time to coat the pillar in the middle, the plastic tubing. Cover the whole tube with melted chocolate, then leave for 30 minutes to dry a little in a cool place.
  • Cover the top of the cake with mini eggs, making sure you have plenty left for the pillar.
  • After 30 minutes, when the melted chocolate on the tubing isn't runny anymore, start attaching the mini eggs all the way to the kink, as in pictures.
  • Leave to dry for another 30-60 minutes before you attempt to attach the large egg above.
  • Create a small opening at the smaller end of the chocolate egg and just very gently place it on the top of the tubing as in the picture.
  • Arrange chicks if using – TA-DA!

Notes

The time taken does not include the baking of the cake, if you are using homemade.

  1. Hi, loving this idea, would buttercream work to hold the flakes in place or milk chocolate better?

  2. This perfect for what I need- thanks for posting it! Can I ask where you got the chicks from? I love their accessories!

  3. Lynn Rimmer

Hi wow wow what a great cake the large egg at the top do you stick it on or just place it? How does it say on so well like you have it.
    Thanks

    1. Thank you so much Lynn! The top large egg is just place on the tubing, which is why it’s important to let the chocolate on the tubing with the mini eggs dry out and harden. You also want a small opening on the large egg, just enough so that it rests on the mini eggs and not “swallow” any up.
