The weekend’s here again! I was going to post this yesterday but didn’t get around to it. Perhaps it was an unconscious decision because, at the back of my mind, I did think that by posting it I would jinx the sudden spell of bright and warm weather that’s hit us since Thursday and that we’re promised until after the weekend! It’s amazing how much sleet and hail we’ve had these past couple of weeks, I had to get my favourite winter coat out again!

It would seem, however, that merely thinking of it has the power to curse the weather! We’ve woken up to a rather overcast day, although thankfully, it doesn’t seem cold. Now that I’ve got the regulatory British weather chat out of the way, let’s get to the recipe of the day, shall we?

A drink recipe today, a very easy drink recipe at that. 10 minutes tops, made with shop bought lemonade (that’s what we call Sprite or 7-Up here in the UK), some strawberries and some lime juice. It’s a fantastic hot weather drink and an added advantage is the fresh fruit intake – dontcha know that strawberries are great for you?!

Make this Strawberry Cooler your Own

You could always go for a diet Sprite or 7-Up although I personally don’t do artificial sweeteners.

If you want to eliminate the soft drink altogether, sparkling water will be a great substitute but of course, you might want to add some sugar or simple syrup to the mix to sweeten it, depending on how sweet you like or don’t like your drinks.

Make it an adult’s drink! You can go so many ways with this, strawberries are very liquor friendly. Cointreau, Vodka, Tequila, Rum, just to name a few.

Ingredients

  • 20 – 30 strawberries hulled
  • 1 litre Sprite or 7-Up
  • juice of 1 lime
  • small handful of fresh mint leaves torn for a stronger taste or leave whole
  • some ice cubes

Instructions

  • Blend the strawberries down to a mushy mix in a blender or chopper. If you haven’t got one, a potato masher or a fork will do the job too.
  • Divide the mashed up strawberries amongst 4 glasses.
  • Follow with a squeeze of lime juice.
  • Place 2-3 ice cubes in each glass.
  • Place 3-4 mint leaves in each glass.
  • Top up with lemonade and serve immediately.

    1. Thank you Brooks, I seem to jinx the weather each time I post a summer recipe, it’s gone dark and wet here once again! My chilli plants are heating it!
