With strawberries in season at the moment, this 7 minute Virgin Strawberry Piña Colada is especially popular with us – the kids are really big fans!
Estimated reading time: 4 minutes
The original Piña Colada is a delicious drink made from just pineapple juice, coconut milk and rum. Amazingly, you don’t lose much by dropping the rum and turning it into a kid friendly drink, the coconut milk is such a presence that it becomes a luscious, creamy drink. Having said that, it never dominates, happy not to take center stage.
Stop Press! Have you got the song playing endlessly in your head already? Which song?! This one:
“If you like piña coladas and getting caught in the rain
If you’re not into yoga, if you have half a brain
If you like making love at midnight in the dunes of the cape
Then I’m the love that you’ve looked for, write to me and escape.”
Everytime I hear or drink Piña Colada, that song goes on a loop in my head, which is fine on the first run, but after the 3rd play, gets pretty annoying! So, I thought I’d share it with you, seems only fair! If you’ve never heard of it, check it out here on YouTube.
Virgin Strawberry Piña Colada
Today’s recipe, Virgin Strawberry Piña Colada, was always a drink in the making from the moment I started planning my last book, a 7 day Ramadan Meal Plan, available on Amazon.
We experimented with many, many drinks, some made the cut easily, others got put on the back burner for the blog, and who knows, maybe another book, another time! One of the recipes that did make it, was Virgin Piña Colada and I always knew I was going to add other fruit to it at some point.
Since strawberries are in season right now in the northern hemisphere, they were the obvious choice no 1 as far as I was concerned. In the summer, when strawberries are not only at their best but also cheap, I have them every single day, on their own, with yoghurt, with mascarpone or just plain old cream.
Making the Virgin Strawberry Piña Colada Your Own
The first one that comes to mind is the number of strawberries you use. I love a hint of strawberries, giving you the pale pink colour you see in the picture.
My husband likes it with more strawberries, which in my opinion, changes the composition and perhaps is no longer a Piña Colada. But hey, taste is a very personal thing. This is why, in the ingredients, I’ve given you 5-10 strawberries, start with 5, taste, add more if you like.
Garnish however you want to. I happened to have had some dried crushed hibiscus petals and decided to sprinkle a touch over the finished drink for some colour, when I was experimenting for the book. Not only did it transform the picture but it added a different dimension to the recipe. Hibiscus petals are a little tart/sour, so that was a lovely extra tang to the final flavour.
You could experiment with this on other days by adding other fruit like bananas, mangoes and raspberries. I made a Vegan Mango Lassi not too long ago, you might fancy checking out, as that uses coconut milk.
Increase or decrease the coconut milk and pineapple juice to your taste.
What to do with leftover coconut milk?
Freeze any leftover coconut milk and add it to curries, stir fries or your rice, next time you make some.
Shall we get our aprons on?
