dried shiitake mushrooms

Instructions
Place the mushrooms in a colander and give them a shake to get rid of grit and excess dust.
Place the water and mushrooms and water in a large saucepan and soak the mushrooms for 30 minutes.
Over a low medium heat, bring to a gentle simmer and leave to simmer for 10 minutes.
Strain through a muslin lined sieve.
Notes
Keep the shiitake for use, especially if using the dashi.
